Breakfast - Scrambled Eggs with Tomatoes and Crispy Smoked Duck

Here's the first recipe that I'm gonna post up here and since it's the first, breakfast shall be it as it's the first and most important meal that we should always have at the start of the day. Click on the Flickr link at the end of this post to look at the hi-res photos 

You'll need:

3 eggs
3 slices of bread (Preferably hard bread like Sourdough, Ciabatta)
3 tomatoes
Few slices of Smoked Duck or bacon
1knob of butter
Olive oil
Sprinkle of Cheese (May use Parmesan or Mozzarella)
Salt and Black Pepper


Now start heating up the toaster and pan, not forgetting to drizzle a bit of olive oil into the pan. Once everything's hot, chuck your bread into the toaster, tomatoes and smoke duck into the pan. Take note here, if you're using Bacon or any other kind of meat with fat, go easy on the olive oil as the cooking process will release the oils from the meat.

While the tomatoes and duck are searing, crack the eggs into the pan and add in the knob of butter. It would be better to use unsalted butter so that you can have more control over the amount of salt you'll be adding later. Now this is extremely important, many people make the mistake of whisking or beating the eggs separately before scrambling. NO DON'T DO that, for goodness sake we're not making an omelette or Fu Yong egg here~! You need to control the entire heating process which is a simple technique I will explain later. Second mistake people often make is by seasoning the eggs way before. Adding salt so early will only break the eggs down and make them watery so please AVOID doing that.

Here comes the heating technique, it may take a while to master but it's really easy, no rocket science at all. With the eggs and butter in the pan, start the fire and keep stirring non-stop, treat it like a risotto. Once you see the egg starting to solidify and judge for yourself, if you feel that the eggs are cooking all too quickly, remove the pan from the heat to one side and keep stirring, the heat in the pan will keep the eggs cooking. Remember to scrap the sides of the pan otherwise the eggs will burn. Once it cools down too much, bring it back to the heat and repeat the same process again. Remember, KEEP STIRING.

At this point of time, you might want to double check on your toasts, if they are ready, go ahead and plate them and drizzle some olive oil over them. Check on your tomatoes and duck as well, make sure you flip them or they'll burn. If they're done, go ahead and plate them too.

Back to the eggs, once they're almost done, it's time to add the cheese and salt. Stir well and remove from the heat then pour the eggs over the bread. Sprinkle black pepper over the eggs and serve with a cup of nice hot coffee for a nice kick start to the day or even a glass of bloody mary of champagne during those happy weekends.

Been feeling quite tired since I've returned from the trip, seems like I haven't got enough rest and my Wisdom Tooth's killing me. I simply can't eat anything solid at all and yet my dental appointment is on the 12th of April! Don't think I can wait that long, shall head down to the Medical Center tomorrow.

Well it's officially Day 2 of Lull for Charlie Wing and yet somehow it feels weird. We're supposed to be working our ass off now as we should be in Pro-Term but somehow we ain't. Now that the cadets are all gone, it's extremely quiet. Then again I should be happy as there will be lesser work for me all the way till I ORD in august but thats not the case yet. I still have quite a number of things pending waiting for me to settle and I must say they are a pain in the ass so I guess it's more hardwork and abit more time before I can rest.

Diving in Tioman

Will be a short post today as I don't know when the satellite internet connection will be cut as the storm is coming in. Anyway for those of you who have no idea where I am now, I'm in Tioman on a dive trip. Am getting my Open Water Diver Cert from SSI and so far I've done 2 dives and both were great experience though we stayed pretty close to the shore. Will be heading out on the boat to other areas for another dive before heading back to Singapore, hope to see more corals and fishes this time. Preferably even a shark or other interesting stuff...time to go, gotta gear up and be out at sea by 0745 tomorrow morning. Photos and excrepts from my dive log when I get back.

Lull till ORD~!

Woot~! Now my Wing's gonna close due to insufficient cadets. With such a huge amount of cadets going over to Artillery for their Professional Term, we're only left with a handful still staying in Infantry which I think can barely make up one I guess the decision of transferring the remaining cadets to Hotel Wing was a good choice, saving manpower and operation costs. However that means no Brunei (Which is Good) and no Taiwan trip which is bad.....cos Taiwan was supposed to be our ORD trip. So it's Lull till ORD~! Hahhaha shiok! Guess I'll have more free time now to go for courses and to start studying.

Labrador Park

Was at Labrador Park on Saturday for Wing Cohesion. Kinda regret partying the previous night....went down to Club MoMo and clubbed all the way till 4am and only reaching home at 5....and so I went with only 2hours of sleep. I must say the cohesion was pretty well organised, had some skit at the start, then came the treasure hunt where we had to run around the park trying to solve clues to complete a crossword puzzle. In the end we , HQ team came in third but the reward ain't really applicable for us. It was catered more for cadets.

Anyway it was my first time to Labrador Park which wasn't surprising as it was really out of the way...but Labrador Park's cool...nice looking restaurant...plenty of romantic spots but hell lotsa mosquitos...

How lucky we are?

The following is with reference to Iraq.

You know your country is in trouble when:

1. The UN has to open a special branch just to keep track of the chaos and boodshed, UNAMI.

2. Abovementioned branch cannot be run from your country.

3. The politicians who worked to put your country in this sorry state can no longer be found inside of, or anywhere near, its borders.

4. The only thing the US and Iran can agree about is the deteriorating state of your nation.

5. An 8-year war and 13-year blockade are looking like the country's 'Golden Years'.

6. Your country is purportedly 'selling' 2 million barrels of oil a day, but you are standing in line for 4 hours for black market gasoline for the generator.

7. For every 5 hours of no electricity, you get one hour of public electricity and then the government announces it's going to cut back on providing that hour.

8. Politicians who supported the war spend tv time debating whether it is 'sectarian bloodshed' or 'civil war'.

9. People consider themselves lucky if they can actually identify the corpse of the relative that's been missing for two weeks.

So for goodness sake pause from time to time as you go about in your daily business. For the reason your family and you can sleep so peacefully at night is all because of us....So think of how we NSmen feel when you simply give us the stares on the MRT, complain that we stink and laugh at our bald shaven heads. You won't be laughing when you, or your wife or daughter's getting raped while your son and father's being beaten to death right before your very fucking eyes.
